I'm thinking of three methods, suggestions below:
Suggestion 1:
A way to show what times are available, and a way to submit a preferred time and activity.
You could do this :
a. A standard 'contact' form builder such as https://extensions.joomla.org/extension/convert-forms/ to capture volunteer registrations (you can build the forms to suit your requirements).
b. A table to show the "filled" and "vacant" slots. Something like https://extensions.joomla.org/extension ... ablemaker/ could facilitate this. The table may need to be done manually e.g. to show the times and activities as "filled" rather than disclosing actual people's names. This may not matter so much if it is done using Joomla's user management system where registered users are signing up to the volunteer roles.
Suggestion 2:
Another way is simply to have an extension that presents a spreadsheet (e.g. Google Docs) and allows people to enter their names in the relevant activity and time slot; I don't know if you can prevent people overwriting others entries in this manner). I would see this method using several worksheets (for the activities) and columns for the time-slows and rows for each of the volunteer numbers (each row labelled "Volunteer 1, Volunteer 2" etc), and then the people would nominate the activity and timeslot appropriately and they would see in real time, the slots already filled or where they are still vacant.
